Our "Crema del Borgo" is a sweet balsamic vinegar with a creamy consistency. It is made from the freshly pressed grape juice of the Pinot Noir grape variety, similar to a real Aceto Tradizionale. The grape juice is fermented in two stages, first into red wine and then into vinegar. A gently cooked grape must of the same grape variety is added to the young vinegar, giving it its characteristically sweet flavour. It is then aged for two months in small oak barrels, where it matures into a mild and harmonious balsamic vinegar.
This fine balsamic vinegar is ideal for preparing fine salad dressings and sauces. It is also a delight as a finishing touch for the classic tomato and mozzarella salad or with goat's cheese.
If you discover a cloudy, jelly-like substance in an opened bottle of vinegar after some time, this does not mean that the vinegar is spoilt. On the contrary, it is a sign of a traditionally produced and unpasteurised vinegar. This substance is known as the "mother of vinegar". It consists of important acetic acid bacteria that convert alcohol into acetic acid when they come into contact with oxygen. When a vinegar is opened, these natural bacteria can sometimes become active again.
